Description

Cream Cheese Zucchini Bread is really easy to make! You’ll love this spiced zucchini bread loaf with a sweet vanilla cream cheese center.


Ingredients

Zucchini bread:

  • 3 1/4 c. all-purpose flour
  • 2 t. baking soda
  • 1/2 t. nutmeg
  • 1 t. cinnamon
  • 1 1/2 t. coarse sea salt
  • 3 eggs
  • 1 1/2 c. light brown sugar
  • 1 1/2 c. white sugar
  • 1 c. oil
  • 2 c. grated zucchini (about 11 1/2 zucchini)

Cream cheese filling:

  • 1 egg
  • 8 oz. softened cream cheese
  • 1 T. vanilla
  • 1/3 c. sugar


Instructions

  1. Preheat the oven to 350 degrees F.
  2. Grease and flour 2 standard loaf pans. Set aside.
  3. In a medium bowl, combine all the ingredients for the cream cheese filling. With your hand mixer, beat the ingredients together until smooth, and set aside.
  4. In a large bowl, combine the flour, baking soda, nutmeg, cinnamon, and coarse salt. Set aside.
  5. In another bowl, combine the eggs, white sugar, light brown sugar, and oil. Stir until all the ingredients are incorporated.
  6. Slowly add the wet ingredients into the flour mixture to form a thick batter. Add the zucchini.
  7. Divide half of the batter evenly between each of the prepared loaf pans. Add the cream cheese mixture, leaving a few 1-inch border between the cream cheese filling and the edge of the pan.
  8. Top with remaining batter.
  9. Bake nearly 1 hr, until a toothpick inserted into the center of the bread comes out clean.
  10. Let the loaves cool in the pans for 5 min. Run knife along the edge of every pan to loosen bread, and then remove it from the pan and transfer to a wire rack to cool utterly.
